Open-faced Enchiladas

Ingredients
  • 2 lb Ground Beef (~90% lean)
  • 2 tbsp Flour
  • 4 tsp New Mexico Hot Chili Powder
  • 1/2 cup White Onion (Chopped)
  • 4 tbsp Butter or Margarine
  • 4 cup Hunts Tomato Juice
  • 2 cup Hunts tomato sauce
  • (Cooking Oil)
  • Condiments
  • 16 corn tortillas
  • White Onion (Chopped)
  • Shredded Lettuce
  • Diced Tomatoes
  • Sour Cream
  • Grated Cheese
Instructions
  1. Sauté ground beef and onion in butter on medium-high heat until beef is cooked; add flour, tomato juice, tomato sauce, and chili powder.
  2. Reduce heat to medium, mix and cover; simmer enchilada sauce until thickened (approximately 10 minutes).
  3. Fry tortillas in a small amount of hot oil, keeping flat; or warm using instructions on the package.
  4. Dip tortilla in sauce and place on plate. Cover in enchilada mixture, top with cheese. Repeat with two more torilas stacked on top of each other on plate.
  5. Top completed enchilada with condiments, if desired.
