Open-faced Enchiladas

Sauté ground beef and onion in butter on medium-high heat until beef is cooked; add flour, tomato juice, tomato sauce, and chili powder.

Reduce heat to medium, mix and cover; simmer enchilada sauce until thickened (approximately 10 minutes).

Fry tortillas in a small amount of hot oil, keeping flat; or warm using instructions on the package.

Dip tortilla in sauce and place on plate. Cover in enchilada mixture, top with cheese. Repeat with two more torilas stacked on top of each other on plate.

Top completed enchilada with condiments, if desired.
